Burrata green gnocchi

A beautifully delicious gnocchi recipe

This creamy and healthy gnocchi recipe has become my favourite! It’s packed with nutrients from all the greens in the sauce as well as flavour from the dreamy burrata🧀 and pistachios

🍽️ 2 portions

🧀Ingredients

  • 1 tbsp olive oil

  • 1 large leek

  • 2 garlic cloves

  • 2 zucchini/courgette

  • A bunch of fresh basil

  • 30g grated Parmesan

  • 30g shelled pistachio

  • Salt and pepper to taste

  • A pack of gnocchi

  • 1 burrata

🧀Method

  • On a large pan add the olive oil and bring to medium heat. Add the leek finely chopped and garlic cloves. Sauté for 5 minutes until it turns translucent. Add the zucchini finely sliced. Cover pan with a lid and cook for about 20min until it turns completely soft. Stir with a spoon every 5 min.

  • Cook the gnocchi following the package instructions and reserve the cooking water

  • To a food processor add the cooked zucchini, pistachio, Parmesan and basil with about 1/4 cup of the gnocchi cooking water and blend until smooth (you can add more water if needed). Season to taste

  • Mix the gnocchi with the green goddess sauce on the pan and bring to medium heat for a couple of minutes to warm it up

  • Serve with fresh torn burrata, a drizzle of olive oil and chopped pistachios on top

FAQS and Tips

  • I f you don’t have burrata you can use mozzarella and a bit of single cream in the sauce instead
