Cheeseburger empanada
A fun empanda recipe for parties for dinner nights!
These cheeseburger empanadas are bursting with flavour with a delicious mince, cheesy filling! They are perfect to serve as an appetizer, side dish or party snack. And I can guarantee they will be a hit with a flavourful and rich cheeseburger filling enclosed by the crispy and flakey empanada dough. I love serving these with cheeseburger sauce or relish !
So what are empandas?
They are a popular savoury pastry recipe in Hispanic countries such as Argentina, Venezuela or Colombia. They consist of a simple dough filled with a variety of fillings such as mince, cheese or corn. Many dough variations exist but here I am teaching you how to make a traditional wheat flour dough that is comon in countries such as Spain or Argentina. Making your own dough can sound intimidating but empanadas are very fool proof and you only need 3 ingredients and a bit of manual kneading to achieve perfect results!

Ingredients
π₯For empanada dough
150g plain flour
1 tbsp olive oil
75g water
For filling
1/2 onion, finely chopped
250g (veggie) mince meat
2 tbsp tomato paste
2 tbsp chopped pickles
1 tsp mustard
Shredded mozzarella and cheddar cheese to taste
Method
Make the dough by adding the flour and olive oil to a bowl and mixing with a spoon. Then add the boiling water and start stirring with a spoon immediately for about 1 min until it starts coming together. Then knead the dough with your hands for about 3 minutes until it all comes together into a ball. Cover with some cling film and leave to rest for 20-30min.
Meanwhile make your filling. Fry the chopped onion in a pan at medium heat with 1 tbsp olive oil. When golden add the mince meat, and cook for 5 more minutes. Add your seasoning, mustard, tomato paste and stir until well incorporated. Turn off the heat and add the chopped pickles and cheeses.
Flour your kitchen counter and roll out the dough into a thin sheet. Use a 10cm biscuit cutter or bowl to cut out discs. Place 1-2 tbsp of filling in the centre of each disc, wet the edges with water, and fold in half to seal. Pleate or use a fork to crimp the edges.
Add olive oil to a pan and bring to medium high heat. Fry empanadas until golden on each side. Transfer to some kitchen paper to remove excess oil and enjoy hot!
FAQS and Tips
Empanadas can also be airfryed or baked instead of fried. Simply brush empanadas with a beaten egg and then bake at 180C for about 20 minutes in the oven until they get golden brown.
