Gorgonzola Butter Beans

A high protein and nourishing meal!

Beans are one of my go to dinner recipes since they are easy to cook and so nutritious and high protein 💪 this wintery version is the definition of comfort food: cheesy and so delicious it will become a staple for you !

🧀Ingredients

  • 250g delica pumpkin, peeled and cubed

  • 1 tbsp butter

  • 10 sage leaves

  • 3 garlic cloves

  • 470g cannellini beans drained

  • 90g Gorgonzola dolce

  • Salt and pepper to taste

  • Parmesan to grate on top

🧀Method

  • Roast your butternut squash with olive oil and salt in the oven at 180c

  • Add the butter to a on at medium heat along with the garlic finely minced and sage leaves. Cook for a couple of minutes until garlic turns golden brown

  • Add your beans and Gorgonzola dolce. Cook at medium low heat while stirring so the Gorgonzola fully melts. Season to taste

  • Finally stir in the roasted squash. Serve on a plate and grate some parmesan on top!

FAQS and Tips

  • If the sauce become too thick you can thin it out with a splash of milk!

  • If you cannot fin delica pumpkin you ca use butternut squash instead
