Ingredients
60g halloumi cheese
2 large eggs
1 tbsp honey
Chilli flakes
1 bread slice
½ ripe avocado
Method
Start by soft boiling the eggs. Place them in a pot, cover completely with water, and boil for 7-8 minutes. Transfer immediately to iced water and leave for 10 minutes to cool, making them easier to peel. Once peeled, slice them in half lengthwise.
Grate the halloumi using the coarse side of a grater. Heat a non-stick pan over medium-high heat and place small piles of grated halloumi into the pan, shaping them into circles slightly larger than your egg halves. P
lace each egg half cut-side down onto the halloumi and cook for 4–5 minutes until the cheese turns golden and crispy. Carefully lift using a spatula and set aside.
