Plantain halloumi waffles
My favourite breakfast waffles!
These plantain halloumi waffles are one of my favourite quick breakfasts. They’re crispy, cheesy, naturally gluten-free, and made with just two main ingredients. If you’re looking for a nourishing breakfast with a balance of protein and healthy carbohydrates, this recipe is perfect.
The salty halloumi cheese pairs beautifully with the natural sweetness of semi-ripe plantain, creating waffles that are both sweet and savoury. The best part? You simply grate the ingredients together and cook them in a waffle maker — meaning you can have fresh homemade waffles ready in under 10 minutes.
These waffles are also naturally flourless and gluten-free, making them a great option for people with gluten intolerance or anyone looking for a simple whole-food breakfast.
I love serving these waffles with avocado and poached eggs for a balanced brunch, but they’re also delicious on their own with a drizzle of honey or maple syrup.
Serving Suggestions
These savoury plantain waffles are incredibly versatile. Some of my favourite toppings include:
Avocado and poached eggs
Greek yogurt and honey
Smoked salmon and cream cheese
A drizzle of maple syrup for a sweet option
Tips for Perfect Waffles
Do not open the waffle maker too early. Wait at least 6 minutes before checking. Opening it too soon can cause the waffle to split and stick to the plates.
Grease the waffle plates well to prevent sticking.
If the waffle sticks slightly, gently loosen it using a fork before removing it.

FAQS and Tips
Are plantain waffles gluten-free? Yes! This recipe is naturally gluten-free and flourless because the batter is made only from grated plantain and halloumi cheese.
What type of plantain works best? A semi-ripe plantain works best for this recipe. It should still be firm but slightly yellow. Overripe plantains can make the waffles too soft.
Can I make these waffles dairy-free? Since this recipe uses halloumi cheese, it is not dairy-free. However, you could experiment with dairy-free cheese alternatives that melt well.
Can I make these without a waffle maker? Yes. You can cook the mixture in a non-stick frying pan like fritters, flattening it slightly and cooking until crispy on both sides.
