The addition of melted mozzarella cheese takes this dish to the next level, adding a stretchy, cheesy texture that pairs beautifully with the spicy broth. FAQS and Tips
What is gochujang? Gochujang is a Korean fermented chilli paste made from red chilli powder, glutinous rice, fermented soybeans, and salt. It has a unique combination of spicy, sweet, and umami flavours that adds depth to dishes.
Can I make this ramen less spicy? Yes! Simply reduce the amount of gochujang and red pepper flakes. You can also add a little extra cream or milk to mellow the heat.
What can I use instead of gochujang? If you don’t have gochujang, you can substitute with a mix of chilli paste or sriracha, soy sauce, and a small amount of sugar to mimic the sweet-spicy flavour.
Can I use a different type of cheese? Absolutely. While mozzarella gives a great stretchy texture, you can also use cheddar, gouda, or even a mix of cheeses for a richer flavour.
How can I add protein to this dish? You can easily add protein by including cooked prawns, tofu, or even a soft-boiled egg on top.
Can I store leftovers? This dish is best enjoyed fresh, as the noodles will continue to absorb the sauce. If needed, store in the fridge for up to 1 day and reheat with a splash of milk.
