Boursin baked eggs

The easiest breakfast idea !

We know Boursin makes everything better so when I saw the viral Feta baked eggs by @feelgoodfoodie I knew I had to try my own spin on them! This is a perfect idea for a quick and delicious breakfast or even dinner plus it packs a good amount of protein thanks to the eggs.

And you literally only need a single baking dish for the entire recipe so it is incredibly easy to put together and clean up, you only need about 3 minutes of prep of get the finished dish. All you need is to add the cheese and eggs with seasonings to a baking dish and in less than 15min you have a creamy and velvety egg scramble - so much better than the frying pan version. This creamy scramble is perfect on toast with tomato or in a wrap with avocado. And if you have any leftovers you can always store them in the fridge or even add them to a tomato salad.

Ingredients

  • 150g Boursin cheese

  • 8 large eggs (or 10 medium)

  • 1 tsp salt

  • 1/2 tsp pepper

  • Drizzle olive oil

  • Optional: flatbread, avocado

Method

  • Take a small baking dish and place the boursin in the middle. Add the eggs around it as well as the salt, pepper and drizzle of olive oil

  • Transfer the baking dish to an airfryer and bake at 165C for 15min our until the eggs are just about set. Remeber that the eggs will continue to cook with the residual heat after you mix them with the cheese so it is okay if they don’t look fully set in the middle. Alternatitvely bake in the oven at 180C for 18-20min

  • Remove the baking dish from the airfryer and use a fork to breakdown the Boursin and mix it well with the eggs.

  • Heat up some bread (I used a flatbread) in the pan or airfryer and add some avocado. Top with the baked eggs and fold it into a roll.

FAQS and Tips

  • You can substitute the Boursin with Roule cheese or even soft goats cheese

  • To increase the protein content in this recipe you can susbtitute some of the eggs with eggs whites
