Cottage cheese pão de queijo

A high protein Brazilian cheese bread!

If you have been following me for a while you probably know that Brazilian pão de queijo is my favourite bread recipe. Can it get better than these chewy and stretchy cheesy puffs that also happen to be gluten free and dead easy to make?

Yes it CAN! Because here I show you how to make a healthier protein packed version with cottage cheese and extra virgin olive oil for those wonderful healthy fats. This recipe is completely fool proof as you only need one bowl and couple of minutes to mix in all ingredients together with no kneading required! I am using my airfryer for a quick and easy baking in less than 15 minutes although you can also use a conventional oven for baking them.

Ingredients

  • 175g cottage cheese

  • 180g shredded mozzarella

  • 40g olive oil

  • 320g tapioca flour

  • 1 tsp salt

  • 1 tsp baking powder

  • 2 egg

Method

  • Add all the ingredients to a large bowl and mix with a wooden spoon until obtaining a dough. Then keep kneading with your hands for a couple of minutes, it should be a bit sticky but firm enough to shake it into balls. Cover with some cling film or a cloth nad leave it to rest for 10min so the starch absorbs properly all the ingredients

  • Divide the dough in 6 equal pieces. Take each piece of dough and shape into balls with your hands. Place balls onto an oven tray covered with parchment paper. Brush each ball with some oil (or melted butter).

  • Bake the breads in an airfryer for 12-14min at 165C until golden.

FAQS and Tips

  • You can make the dough in advance, wrap it in cling film and keep it in the fridge for 1-2 days until ready to bake

  • You can also bake them in a preheated oven at 180C for about 25 min until they get a light golden brown colour
