Crispy potato & chorizo taquitos

A delicious Mexican snack!

Golden, crispy, cheesy, and packed with smoky flavour 🌮✨ These crispy potato and chorizo taquitos are one of my favourite easy Mexican-inspired dinners to make at home. The filling is made with fluffy potatoes, crispy chorizo, melted mozzarella, and salsa macha for a little extra kick, all wrapped in tortillas and fried until perfectly crunchy. Paired with a creamy homemade chipotle sauce, they’re seriously addictive and perfect for sharing (or not 👀).

Ingredients

  • 450g potatoes

  • 100g chorizo

  • 200g shredded mozzarella

  • 1 tsp salsa macha

  • 1 tsp salt

  • 8 tortillas

  • Olive oil, for frying the taquitos

For the chiplote sauce

  • 100g sour cream

  • 1 tsp Mexican seasoning

  • 1 tsp chipotle paste

  • ½ tbsp lime juice

Method

  • Peel and chop the potatoes into small chunks. Add them to a pot of boiling water and cook until fork-tender. Drain the water and set aside.

  • Meanwhile, make the chipotle sauce by adding all the ingredients to a bowl and mixing well with a spoon.

  • Add the chorizo, chopped into small chunks, to a frying pan over medium-high heat. Stir frequently until it crisps up and releases its oil.

  • Add the cooked chorizo, potatoes, salsa macha, and salt to taste to a bowl. Using a fork, mash the potatoes and mix well with the rest of the ingredients. This is your filling for the taquitos.

  • Warm the tortillas briefly so they are easier to fold, then add the filling and some mozzarella to the middle of each tortilla. Roll the taquitos up, folding one side over the other.

  • Add about 2cm of olive oil to a frying pan and bring to medium-high heat. Fry the taquitos for about 2 minutes on each side, until golden and crispy. Remove from the oil and transfer to a plate lined with kitchen paper to drain off the excess oil.

  • Serve the taquitos immediately with your chipotle sauce.
