200g peeled potato
60g halloumi
2 tbsp cornstarch
1 tsp salt
Method
Switch on your waffle maker and leave it to heat up
Peel the potato and grate with the coarse side of a grater into a bowl. Now press it against a strainer with the back of a spoon or use a cheese cloth to remove as much water as you can
Grate your halloumi cheese and add it to the grated potatoes along with the cornflour. Add the salt and mix well with a spoon
Add some oil to the waffle iron plate to prevent the plantain batter from sticking. Add half of your potato halloumi mix and cook until waffles are crispy and brown on the outside, about 6-7 minutes.
Repeat with the remainder of the batter
