These crispy, cheesy taquitos are packed with creamy roasted sweet potato, spicy chorizo, melted mozzarella and a little chipotle for smoky heat. Everything gets tucked into tortillas and fried until golden and irresistibly crunchy — basically the perfect combination of crispy, gooey and spicy.

I love the slight sweetness of the sweet potato with the salty, spicy chorizo, while the chipotle adds an extra layer of smoky flavour. And because no taquito is complete without a dipping sauce, I serve these with a quick chipotle lime crema that’s cool, tangy and just spicy enough.

What to serve with sweet potato taquitos

These are delicious served hot with the chipotle crema for dipping. For a bigger spread, serve them alongside guacamole, salsa, pickled onions, fresh coriander and plenty of lime.

Tip: Make sure you don’t overfill the tortillas — a smaller amount of filling makes them much easier to roll tightly and gives you that perfect crispy-to-filling ratio.

Ingredients

  • 450g sweet potatoes (approximately 2 medium sweet potatoes)

  • 100g (spicy) chorizo

  • 200g shredded mozzarella

  • 1 tsp chiplote paste

  • 1 tsp salt

  • 8 tortillas (corn or wheat)

  • Olive oil, for frying the taquitos

For the spicy crema sauce

  • 100g sour cream

  • 1 tsp Mexican seasoning

  • 1 tsp chipotle paste

  • ½ tbsp lime juice

Method

  • Use a fork to pierce the sweet potato, cover with tin foin and bake in a pre-heated oven oven at 180C for approximately 1h until soft

  • Meanwhile, make the chipotle sauce by adding all the ingredients to a bowl and mixing well with a spoon.

  • Add the chorizo, chopped into small chunks, to a frying pan over medium-high heat. Stir frequently until it crisps up and releases its oil.

  • Add the cooked chorizo, potatoes, chiplote paste, and salt to taste to a bowl. Using a fork, mash the potatoes and mix well with the rest of the ingredients. This is your filling for the taquitos.

  • Warm the tortillas briefly so they are easier to fold, then add the filling and some mozzarella to the middle of each tortilla. Roll the taquitos up, folding one side over the other.

  • Add about 2cm of olive oil to a frying pan and bring to medium-high heat. Fry the taquitos for about 2 minutes on each side, until golden and crispy. Remove from the oil and transfer to a plate lined with kitchen paper to drain off the excess oil.

  • Serve the taquitos immediately with your chipotle sauce.

  • Which Mexican seasoning do you use? I like Old el paso taco seasoning best. Alternatively you can make your own by mixing: 2 tsp chilli powder, 1½ tsp ground cumin, 1 tsp paprika, 1 tsp garlic powder, 1 tsp onion powder, ½ tsp dried oregano, ½ tsp salt, ¼ tsp black pepper, ¼ tsp crushed red pepper flakes
