Ingredients

  • 200g cottage cheese

  • 10g fresh dill

  • 1/2 lemon juice 

  • 40g milk 

  • Salt

  • 60g cubed avocado

  • 1 tbsp pickled onions

  • 3-4 soft boiled eggs 

  • 80g cooked sweet potato

  • 80g cooked salmon

Method

  1. Bring a saucepan of water to the boil and cook the eggs for 6 minutes. Transfer them immediately to a bowl of iced water, then peel once cooled.

  2. Meanwhile, peel the sweet potato and cut it into roughly 2cm cubes. Lightly spray with olive oil and cook in the air fryer at 190°C until tender.

  3. In a large bowl, combine the cottage cheese, dill, lemon juice, milk and a pinch of salt. Blend until smooth and creamy.

  4. Add the avocado, pickled onions, cooked sweet potato, salmon and peeled eggs. Using a fork, gently mash everything together until creamy, leaving a few larger pieces of potato and egg for extra texture.

  5. Finish with a sprinkle of chilli flakes and a drizzle of olive oil, if desired. Serve immediately or chill until ready to enjoy.
