Green goddess halloumi pasta
A nourishing and beautiful pasta recipe!
This 20min pasta dish is the perfect weeknight meal that is packed with nutritious veggies and protein! The viral green goddess sauce is a crowds favourite because it is not only stunning but is also an easy way to incorporate lots of vegetables into a single tasty dish.
I’ve modified this viral sauce with cottage cheese so it packs way more protein than the original recipe. I am also adding some honey coated crispy halloumi on top for added flavour and protein which really balances out this pasta dish.
The beauty of this recipe is that it is really customisable and you can swap some ingredients depending on what you have in the fridge. No leeks ? Try onion instead ! No spinach? You can use kale or cavolo nero! No pistachio? Try cashew nuts or even almonds! For a more indulgent version you can also swap the cottage cheese for Boursin or full fat cream cheese.

Ingredients
1 large leek
2 garlic cloves
1/2 tsp olive oil
250g spinach
40g Parmesan cheese
30g shelled pistachio
100g cottage cheese
180g dried pasta of your choice
160g halloumi, cubed
1/2 tbsp honey
Method
Add the olive oil to a frying pan and bring to medium heat. Add the finely sliced garlic and leek. Cook for 8-10min until the leek softens and it turns translucent. Season with salt
Meanwhile blanch the spinach by pouring boiling water over it in a bowl. Leave it for 30 seconds and then drain off the water. To the same bowl add the cottage cheese, cooked leeks, parmesan cheese, and pistachios. Blend the sauce with a high speed bleeder or hand blender until it becomes very smooth. Try and and add some more salt and pepper if needed
Boil your pasta in salted water following package instructions until al dente. Drain off the water and keep some of the pasta cooking water
While the pasta cooks pan fry the halloumi until it turns golden. Turn off the heat and drizzle the honey over the halloumi
Mix your pasta with the green goddess sauce and add a bit of the pasta water until getting a creamy consistency. Plate it and then add some of the halloumi on top
