Ingredients
1 tbsp olive oil
2 cloves garlic
1/2 tbsp tomato paste
1 tsp Italian seasoning
1 tsp crushed pepper flakes
300mL vegetable stock
50mL single cream
1 ramen pack (I recommend cheese ramen)
80 mozzarella cheese, grated
Fresh chives, for garnish
Method
Take a medium size pan, add the olive oil and bring it to medium heat. Add the finely chopped garlic to the pan and pan fry while stirring for 2 mins until golden.
Season with salt, pepper, and add the tomato paste, and herbs. Add the vegetable stock, cream and mix well.
Now add ramen and cook for 6-8min until the noodles soften. Add the mozarella cheese and cook for 2 more minutes until it melts. Garnish with the chives and enjoy !
