Ingredients
1 tbsp olive oil
1 onion
2 garlic cloves
1/4 cup white wine
1 tbsp flour
180g single cream
3/4 cup vegetable stock
40g Parmesan cheese
Peel of 1 lemon
4 salmon fillets
Fresh dill
Method
Add the salmon filets to the skillet brushed with olive oil. Season with salt and pepper and cook until golden brown and crispy, about 3 minutes on each side. Remove the filets from the skillet and set them aside.
Heat the olive oil in a large skillet over medium-high heat. Then sauté the finely chopped garlic, and onion for 10-15 minutes until the onion becomes soft and translucent. Dlaze the pan with the white wine and cook for a few minutes until it evaporates
To the same skilled add the flour, and cook for 1-2 minutes will stirring. Then add the single cream followed by the vegetable stock while stirring. Cook for a couple of minutes until the sauce thickens.
Now grate the parmesan cheese and add the lemon peel into the sauce
Finally return the salmon fillets into the pan and cook for 5 minutes covering with a lid before serving. Top with the fresh dill.
FAQS and Tips
You can skip the white wine step if you orefer to avoid alcohol although it evaporates with the cooking
