Ingredients

  • 1 tbsp olive oil 

  • 1 onion 

  • 2 garlic cloves 

  • 1/4 cup white wine

  • 1 tbsp flour

  • 180g single cream 

  • 3/4 cup vegetable stock 

  • 40g Parmesan cheese 

  • Peel of 1 lemon

  • 4 salmon fillets 

  • Fresh dill

Method

  • Add the salmon filets to the skillet brushed with olive oil. Season with salt and pepper and cook until golden brown and crispy, about 3 minutes on each side. Remove the filets from the skillet and set them aside.

  • Heat the olive oil in a large skillet over medium-high heat. Then sauté the finely chopped garlic, and onion for 10-15 minutes until the onion becomes soft and translucent. Dlaze the pan with the white wine and cook for a few minutes until it evaporates

  • To the same skilled add the flour, and cook for 1-2 minutes will stirring. Then add the single cream followed by the vegetable stock while stirring. Cook for a couple of minutes until the sauce thickens.

  • Now grate the parmesan cheese and add the lemon peel into the sauce

  • Finally return the salmon fillets into the pan and cook for 5 minutes covering with a lid before serving. Top with the fresh dill.

FAQS and Tips

  • You can skip the white wine step if you orefer to avoid alcohol although it evaporates with the cooking
