Ingredients

  • 250g grated potato

  • 1 egg

  • 60g shredded mozzarella cheese

  • Optional seasoning: 1 tsp salt, 1/2 tsp thyme, 1/2 tsp oregano

Method

  • Preheat your oven to 180°C and line a baking tray with parchment paper.

  • Grate the potato into a bowl, then use a cheesecloth, clean towel, or sieve to squeeze out as much excess water as possible. This step is essential for firm, crispy buns.

  • Transfer the drained potato to a bowl and add the egg, shredded mozzarella, and optional seasoning. Mix well until fully combined.

  • Divide the mixture into 2 portions on the lined baking tray. Use the back of a spoon to shape and flatten each portion into a round bun shape.

  • Bake for 16–20 minutes, or until the buns are set and slightly golden.

  • Allow to cool slightly before serving.
