Spanish baked eggs

One of my favourite egg recipes!

If you love baked egg recipes such as Shakshuka you need to try my Spanish baked eggs! This recipe has more of a Mediterranean feel as it uses onions, tomatoes and peppers and it is spiced with smoke paprika and oregano. It is packed with fiber, protein and it is ideal for a healthy brunch or diner recipe

Ingredients

  • 1 tbsp olive oil

  • 1 onion

  • 1 red pepper

  • 1 green/yellow pepper

  • 1/4 cup white wine

  • 2 tomatoes

  • 1 tsp paprika

  • 1 tsp oregano

  • 6 large eggs

  • Mozzarella cheese

Method

  • Boil your eggs for 7-8min and then transfer to ice cold water for 5min to they are easier to peel.

  • Finely dice the onion and peppers. Slice the tomatoes into round slices about 2cm thick.

  • To a pan add the olive oil and bring to medium heat. Incorporate the diced peppers and onion and cook for 20 minutes while stirring occasionally until they soften. Season with salt and pepper to taste. Now add the wine and cook for 2 more minutes so the alcohol evaporates.

  • Now spread the veggies evenly across the pan and arrange the tomato slices on top. Cover with a lid and cook for 5 minutes. Arrange the halves of boiled egg on top of each tomato slice. Dust with some paprika and finally add the mozzarella cheese to taste. Cover with a lid and cook for 5 more minutes until the mozzarella melts.

FAQS and Tips

  • If you like a crispy cheese top I recommend grilling the eggs in the oven for 8min once you add the mozzarella cheese.
