Ingredients
1 tbsp olive oil
1 onion
1 red pepper
1 green/yellow pepper
1/4 cup white wine
2 tomatoes
1 tsp paprika
1 tsp oregano
6 large eggs
Mozzarella cheese
Method
Bring a pot of water to a boil and cook the eggs for 7–8 minutes. Transfer them to ice-cold water for 5 minutes, then peel and set aside.
Finely dice the onion and peppers. Slice the tomatoes into thick rounds.
Heat the olive oil in a large pan over medium heat. Add the diced onion and peppers and cook for 20 minutes, stirring occasionally, until soft and slightly caramelised. Season with salt and pepper.
Add the white wine and cook for 2 minutes, allowing the alcohol to evaporate.
Spread the vegetables evenly across the pan and arrange the tomato slices on top. Cover with a lid and cook for 5 minutes.
Slice the boiled eggs in half and arrange them on top of the tomatoes. Sprinkle with smoked paprika and add mozzarella cheese to taste.
Cover with a lid and cook for 5 more minutes, until the cheese melts.

If you like a crispy cheese top I recommend grilling the eggs in the oven for 8min once you add the mozzarella cheese.
