French onion soup ramen
A great comfort ramen recipe for winter!
French onion soup and ramen are two of my favourite comfort recipes for winter, they are warm, comforting and packed with umami flavour.
The star incredient are the slowed cooked soft and sweet caramelised onions that pairs amazing with the aromatic spiced infused broth, noodles and cheesy mozzarella topping.

Ingredients
25g butter
350g yellow onion
1 clove garlic
30mL dry sherry/red wine
450mL stock
1 sprig thyme
1 tsp vinegar
1 ramen pack (I recommend cheese ramen)
225g Gruyère/mozzarella cheese, grated
Fresh chives, for garnish
Method
Take a medium size pan, add your butter and bring it to medium heat. Once the butter starts melting add the onions to the pan and pan fry while stirring for 10 mins until soft.
Season with salt, pepper, and add the thyme, chopped garlic. Cover with a lid and cook for 1h, stirring every 15min, until caramelised. The onions should be really golden and soft.
Finally increase the heat and keep stirring as you gradually add the wine and winegar. Let it simmer for 5 minutes until the wine has evaporated.
Now add the stock and ramen and cook for 8-10min until the noodles soften. Add the cheese and cook for 2 more minutes until it melts.
