Ingredients
30g butter
350g yellow onion
2 cloves garlic
30mL dry sherry/red wine
600mL stock
1 sprig thyme
1 tsp vinegar
2 ramen pack (I recommend cheese ramen)
200g Gruyère/mozzarella cheese, grated
Fresh chives, for garnish
Method
Heat the butter in a medium pan over medium heat. Once melted, add the sliced onions and cook for 10 minutes, stirring occasionally, until softened.
Season with salt and pepper, then add the thyme and chopped garlic. Cover with a lid and cook for about 1 hour, stirring every 15 minutes, until the onions are deeply caramelised, golden, and soft.
Increase the heat slightly and gradually add the sherry or wine and vinegar while stirring. Simmer for 5 minutes until the liquid reduces and the alcohol evaporates.
Add the vegetable stock and ramen noodles. Cook for 8–10 minutes, until the noodles are tender.
Add the grated cheese and cook for 2 more minutes, until fully melted into the broth.
Garnish with fresh chives and serve immediately.
