Inspired by the viral feta pasta that took the internet by storm, this version swaps in luscious burrata for an even creamier, more indulgent twist. As the pasta cooks, it absorbs a garlicky, tomato-infused sauce that becomes silky and deeply savoury.

Ingredients
1 burrata
300g cherry tomatoes
1 tbsp olive oil
½ tsp salt
¼ tst black pepper
1 tsp Italian seasoning
½ tsp chilli flakes
50g grated Parmesan
15g fresh basil
180g dried pasta
Method
Using a baking dish that’s safe for the oven add the tomatoes, olive oil, salt and pepper and mix to combine.
Add the burrata to the center of the baking dish and drizzle with the olive oil. Cover with tin foil and bake in the oven at 180C for 40min.
Meawhile cook the pasta following package instructions
As soon as it comes out of the oven use a fork to smash the the tomatoes and mix them with the burrata.
Add cooked pasta, chopped fresh basil, parmesan and some pasta water on top and give everything a stir. The burrata and tomatoes will essentially create a sauce for the pasta.
FAQS and Tips
Can I substitute burrata with something else? Yes—if you can’t find burrata, fresh mozzarella works well. You won’t get quite the same creamy centre, but it will still melt beautifully into the pasta. Ricotta is another great option for a softer, more spoonable finish.
Can I make this ahead of time? This dish is best enjoyed fresh, as the burrata creates its signature creamy texture when served immediately. If you do reheat it, add a splash of water or milk to loosen the sauce.
What type of pasta works best? Short pasta like rigatoni, penne, or fusilli works best because it holds onto the sauce really well. That said, spaghetti or linguine will still be delicious.
Is this recipe spicy? Not unless you want it to be. The chilli flakes are optional, so you can adjust the heat to your preference—or leave them out entirely.
Can I add protein or vegetables? Definitely. Grilled chicken, prawns, or even crispy pancetta would pair beautifully. For vegetables, try spinach, courgette, or roasted aubergine for extra depth and texture.
