Ingredients
100g halloumi cheese
1/2 tbsp honey
2 eggs
1/2 tsp chilli flakes
1/2 tsp salt
1/2 avocado
30g shredded mozzarella
Method
Take a small pan and bring it to medium heat. Add the shredded halloumi and drizzle some honey on top. Add the 2 beaten eggs and cover with a lid for 3min until the eggs set.
To one hald of the omelette add the shredded mozarella, and the sliced avocado. Season with the salt, chilli flakes. Using a spatula fold the omelette in hald and cook for 1-2 more min so the mozarella melts.
Remove the omelette from the pan, drizzle with some more honey and enjoy while hot!
